Thai Peanut Sauce
This sauce is great for satay, dipping veggies, or as a dressing.
Ingredients:
1/2 cup mass market peanut butter (already has some salt and sugar)
1 tablespoon brown sugar
OR
1/2 cup peanut butter natural, unsweetened (you can buy or make your own with any desired nut with a food processor)
2 tablespoons brown sugar
1-2 tablespoons soy sauce (depending on your salt preference or use low sodium soy sauce) (or tamari or liquid aminos for gluten free)
1 tablespoon rice vinegar
2 teaspoons your preferred hot sauce more or less to taste OR 1/4 teaspoon crushed red pepper
1 tablespoon fresh lime or lemon juice
3/4 teaspoon garlic powder or 3 garlic cloves pressed or grated
1/4 teaspoon ground ginger or 1 tablespoon ginger root grated
2-4 tablespoons warm water
Instructions:
Whisk all ingredients together except water.
Add water as needed to dilute to desired consistence — thicker for a dipping sauce, thinner for a dressing.
May warm on stove or in microwave if desired, also makes it easier to mix.
Notes:
Increase or decrease sugar for your desired sweetness, soy sauce for your desired saltiness, and hot sauce or red pepper for your desired heat.
Can substitute honey or maple syrup for brown sugar.
Can be stored in fridge in an airtight container for up to 10 days.
