Fried Rice / Nasi Goreng
This is a flexible easy to make recipe to use up leftover cooked rice as well as many different left over meats and veggies. This is a staple of both Chinese and Indonesian cooking.
Ingredients:
left over rice (white, brown, or black)
vegetable oil (I use olive oil for everything)
eggs (optional)
diced meat (optional)
soy sauce
black pepper
salt
cumin, coriander, and/or curry seasoning
minced garlic or garlic powder
diced onions
diced red pepper, diced carrots, diced broccoli, and/or similar vegetables
corn and/or peas (optional)
hoisin sauce (optional)
Directions:
Grease pan (preferably an iron pan) with oil.
Scramble eggs and cook as a single flat sheet or scrambled. If as a flat sheet, slice egg into short strips or other shapes as desired. Then set aside on plate.
Stir fry meat in pan if not already cooked adding oil and seasoning (soy sauce, etc) as needed/desired. Then set aside on plate.
Stir fry onions in pan adding oil and seasoning as needed/desired. Add carrots, peppers, broccoli as well if uncooked. Set aside.
Stir fry rice in pan adding oil and seasoning as needed/desired. I usually go light on the soy sauce.
Add back the meat and stir fried veggies, mix on low heat.
Add corn and peas (even if frozen), mix on low heat.
Add the cooked egg, mix on low heat.
Serve topped with an attractive squirt of hoisin sauce if desired.

This is a very easy recipe to ad lib as you wish and as fits your rhythm and tastes.
